Shrimp Pasta Salad Recipe
It’s summertime, and that means lots of barbecues and cookouts. Our Shrimp Pasta Salad Recipe is ideal for when you’re in a pinch for a potluck side dish or just want to try something a little different (we’re also tired of baked beans!). Complemented by asparagus and bell peppers, this pasta salad is as colorful as it is tasty.
1 pound medium penne pasta
2 tablespoons butter
2 tablespoons olive oil
1 onion, diced
¼ cup celery, diced
1 cup asparagus, chopped
½ cup green bell pepper, diced
½ cup yellow bell pepper, diced
2 teaspoons yellow mustard
2 teaspoons lemon juice
1 cup mayo (more may be needed)
1 tsp Old Bay or Cajun Seasoning
½ teaspoon hot sauce
1 teaspoon dried parsley flakes
Salt, to taste
Black pepper, to taste
1 lb. raw large peeled and deveined shrimp
First, prepare the pasta. Bring water to a boil and add pasta. Cook for about 7 minutes, or until pasta is tender. Then, drain the pasta.
In the meantime, while the pasta is cooking, chop and dice the vegetables. Once prepared, add 2 tbs. olive oil to a large nonstick pan. Heat olive oil on medium heat, and then, add the onions, celery, asparagus, and green and yellow bell peppers. Cook until the veggies are translucent in color. Set aside in a bowl.
As the veggies are cooking, rinse the shrimp. Toss shrimp in a bowl and season with salt and pepper. Then, brown 2 tbs. of butter in a separate nonstick pan on medium to high heat. When the butter is melted, individually place shrimp in the pan using tongs. As a rule of thumb, shrimp prepare quickly and they are easy to overcook. Therefore, cook shrimp for 1.5-2.5 minutes on each side. Remove from heat.
In a separate bowl, combine the mayo, lemon juice, mustard, and hot sauce. Sprinkle in the Old Bay or Cajun seasoning. Set aside. Next, combine the prepared pasta, mayo mixture, and shrimp. Stir thoroughly.
Lastly, add the cooked veggies. Stir again. Top it off with sprinkled parsley or your other favorite herb. Add salt and pepper, to taste. After refrigerating, serve and enjoy as a side dish or a light meal on its own!
